Butterflied Whole Roasted Chicken
This is one of those meals the chef can practically make with his eyes closed and with whatever happens to already be in the kitchen. It’s simple, comforting, and somehow always feels a little impressive when it comes out of the oven.
A good roast chicken is a classic for a reason. Crispy skin, juicy meat, and the kind of smell that slowly takes over the whole apartment and makes everyone hungry before dinner is even ready. Perfect for a Sunday dinner, meal prep for the week, or feeding a group without overcomplicating things.
The butterfly method (also called spatchcocking, if you want to sound fancy) helps the chicken cook faster and more evenly, which means less waiting and a better end result. More crispy skin, fewer dry spots, and dinner on the table quicker.

Method
- Preheat the oven to 375℉
- Lay the chicken breast-side down with the backbone facing up.
- Using sharp kitchen shears, cut along one side of the backbone from end to end. Repeat on the other side and remove the backbone completely.
- You may need a knife to help cut through some of the bones.
- Flip the chicken over and press firmly on the breastbone to flatten it slightly.
- Place the chicken in a large bowl and season generously on both sides with salt and pepper to taste. We also add paprika and adobo.
- Add the aromatics – onion, garlic, lemon, thyme, and rosemary to the bottom of the baking dish.
- Place the chicken directly on top of the aromatics.
- Drizzle lightly with canola oil.
- Bake for about 35–45 minutes, depending on the size of the chicken, until the skin is crisp and golden brown, the juices run clear, and the internal temperature reaches 165℉ in the thickest part of the thigh.
- Let rest 10 minutes before carving.

Notes from the Kitchen
- This is a classic roast chicken base recipe—we usually add extra heat and seasoning, but this is the foundation we come back to again and again.
- Don’t overthink it if it feels easy. Roast chicken should be simple.
- Very easy to customize with your favorite spices, herbs, or citrus.
Baker’s Rating: 4 out of 5
Baker’s Review:
Moist, juicy, and surprisingly quick for a whole chicken. A roast chicken dinner feels nostalgic in the best way—simple, comforting, and always delicious.
