Rum Balls

This recipe has been a holiday staple in my family for as long as I can remember. Over the years, I’ve introduced countless friends to these little chocolate-and-rum treats, and they’ve quickly become one of the most requested recipes I make.

In fact, last year I found myself asking, why do we only make these in December?

Last summer, we set up a small folding table at a neighborhood street festival near our apartment, and the rum balls produced some of my favorite reactions of the day. One woman took a bite and immediately started dancing. Another man walked past, sampled one, then made a full U-turn halfway across the street to come back and buy three more.

While they require a little patience, the payoff is always worth it. The flavors deepen as they rest, transforming from simple chocolate truffles into something rich, complex, and impossible to stop eating. Just be warned: once you share them, you’ll almost certainly be asked to make them again.

Rum Balls

A family-favorite rum ball recipe made with chocolate, vanilla wafer crumbs, walnuts, and rum. These no-bake treats become even better after a few days of resting, making them perfect for holidays, parties, and gifting.
Course: Dessert

Ingredients

  • 1 cup Semisweet Chocolate Chips
  • ½ cup Sugar
  • 3 tbsp Corn Syrup
  • 2½ cups Finely Crushed Vanilla Wafers
  • 1 cup Finely Chopped Walnuts toasted
  • ⅓ cup Rum
  • Additional Sugar for Rolling

Equipment

  • Medium saucepan or double boiler
  • Mixing Bowls
  • Rubber Spatula
  • Airtight container, tin, or Tupperware

Method

Melt the Chocolate
  1. Place the chocolate chips in a heatproof bowl set over a saucepan of hot (not boiling) water.
  2. Stir until completely melted and smooth, then remove from heat.
Make the Mixture
  1. Stir the sugar and corn syrup into the melted chocolate until fully incorporated.
  2. Blend in the rum.
  3. In a separate bowl, combine the vanilla wafer crumbs and chopped walnuts.
  4. Add to the chocolate mixture, stirring until evenly combined.
Form the Rum Balls
  1. Using your hands or a small cookie scoop, portion the mixture into approximately 1½-inch balls.
  2. Firmly pack and roll each ball between your palms until smooth.
  3. Roll each rum ball in granulated sugar to coat.
Let Them Ripen
  1. Transfer the rum balls to an airtight container.
  2. Cover and allow them to rest for at least 4-5 days before serving. The texture will firm up and the flavor will continue to develop as they sit.

Notes from the Kitchen

  • No food processor? A zip-top bag and rolling pin work perfectly for crushing the vanilla wafers. No rolling pin? A sealed bottle of wine does the job too.
  • It will be tempting to sneak one immediately. Resist the urge. A several days of resting makes a huge difference in both texture and flavor.
  • These make excellent gifts and travel surprisingly well during the holidays. Share at your own risk. Requests for another batch are almost guaranteed.

Chef’s Review:

Oh my gawd, I think I’m drunk! You can definitely taste the rum. Rich, moist, and intensely chocolatey. Willy Wonka’s daughter has done it again.
